Chef reveals how it feels to cook for celebrities like Roger Federer
Kalesh Kamal - a celebrity chef who cooked for uncountable well-known personalities including tennis legend Roger Federer and India’s president -, told Daily Mail what was his favorite cooking experience, rated the experience of cooking for Roger and revealed some valuable tips for the home cooks out there.
Kalesh grew up in South India, but he wandered the world impressing even the most exquisite tastes and therefore he was recently employed at Plaza Premium Lounge, a company that offers excellent airport hospitality services.
The chef declared that cooking for Roger Federer was a great experience, but his preparing food for the President of India is his all-time favorite episode of his career.
“Getting the opportunity to cook for the President of India was crazy. There was so much security around the whole thing. While I was cooking, there were seven security guards around me asking me questions about every single ingredient and where it had come from and how I was using it. They had to make sure the dish was entirely safe - it was quite stressful cooking!”, said Kalesh for Femail.
As we mentioned above, Kamal wandered the world, but this brought himself a lot of valuable lessons. Among these lessons, cooking for 5000 travelers on a cruise was one of the most demanding ones: “Cruise ships are well-oiled machines. It's organisation to its limits. I worked on board for a while and was one of two people who would cook fish for 5,000 people in one evening. For me, that was the best training as a young chef - as you learn not only to be good under pressure but also to have a rough gauge of how much and what people are going to go through.”
For the more common chefs and for the ones who want to impress their family and friends with their cooking skills, Kalesh shared his top five ingredients - parsley, garlic, olive oil, butter and parmesan -, that do wonders for his meals: “If I'm at home and cooking for my family, I always start with parsley and garlic. I'll chop them up and rub them together while I'm thinking what I'm going to make.”
Furthermore, the Indian shared two tips that every home cook should follow to get more compliments from their guests: “Slow cooking really does enhance the flavours. You should also try and cook seasonally if you can as it'll make things taste better.”
